Yam's preparation for 4 people
Ingredients:
1 yam (about 500-600 g)
1 tablespoon of salt (adjust to taste)
Water (enough to cover the yams in the pot)
Instructions: Prepare the Yam: Peel the yam using a sharp knife, making sure to remove the thick, rough skin. Then, cut the yam into thick slices or evenly sized pieces (about 5 to 7 cm long). Rinse them thoroughly under cold water to remove excess starch.
Cooking: Place the yam pieces in a large pot. Add enough water to cover the yams, then add one tablespoon of salt. Bring it to a boil over medium heat.
Boiling: Once the water begins to boil, slightly reduce the heat to maintain a gentle boil. Let the yams cook for about 20 to 25 minutes, or until they are tender when pierced with a fork.
Leaf preparation
Ingredients: Leafy Greens Sauce
300g of potato leaves or spinach for variety (or any leafy greens of your choice)
500g of meat (beef, lamb, or chicken depending on your preference)
Optional: smoked shrimp
6 fresh tomatoes, diced
1 medium onion, finely chopped
2 cloves of garlic, minced
1 bell pepper (red or green), diced
Optional: 1 carrot, sliced
1 bouillon cube (optional)
1 chili pepper (adjust to taste), chopped
1 tablespoon of tomato paste
1 teaspoon of ground ginger
6 tablespoons of vegetable oil
Salt and pepper to taste
500 ml of water or meat broth
A few parsley or coriander leaves for garnish
Instructions:
Prepare the leaves: Chop the leaves and wash them thoroughly several times. Pre-cook the leaves in a small amount of water until tender, then drain them.
Prepare the meat: In a large pot, heat the oil over medium heat. Brown the meat on all sides until golden. Season with salt and pepper.
Sauté the vegetables: Add the onion, garlic, bell pepper, and carrot to the pot. Sauté for about 5 minutes until the vegetables are soft and fragrant.
Add the tomatoes and spices: Stir in the diced tomatoes, tomato paste, chili pepper, and ginger. Mix well to coat the vegetables and meat with the spices.
Simmer: Add the pre-cooked leaves to the pot and let everything simmer for about 20 minutes. Ensure the meat is fully cooked and tender.
Check and adjust: Taste for seasoning, adjust the salt and pepper if needed, and let it simmer a bit longer to reduce the liquid if necessary.
Garnish and serve: Once the sauce is ready, garnish with parsley or coriander leaves and serve with boiled yams.
